Résumé

For nearly two centuries, the stories about the Ackerman-Laurance house have followed each other and have been similar, making Jean-Baptiste Ackerman the pioneer and legendary figure of an extraordinary adventure in sparkling wines in Saumur. Through the intensive use of the company's archives but also of public archives and notarial acts, this thesis offers an alternative story by examining the links between the wine-making activity and the evolutions of the Ackerman-Laurance house in the 19th century. Ackerman-Laurance, being the name of the family business, we have chosen to reconstitute families, the trade and the sparkling wine business by following the lives of its successive leaders, Jean Baptiste Ackerman and then his son Louis-Ferdinand Ackerman. Through a micro-historical approach, we have chosen to highlight the actors and actresses, to reconstitute the family's and business's structures, practices, and representations of the trade and sparkling wine's industry. Particular attention was paid to the restitution of social networks, production mechanisms and marketing as well as the study of interactions with the Saumur region and the market. In a turbulent 19th century, the Ackerman-Laurance history is complex and curved : from the bourgeois family whose activity of manufacturing sparkling wines depends on the family trading model to the family of notables profoundly transformed by the conversion of an inherited legacy into an industrial sparkling wine company whose products are exported throughout the entire world. The company Ackerman-Laurance tells its story and is to be understood through its successes as well as its entrepreneurial and familial failures.
Depuis près de deux siècles, les récits sur la maison Ackerman-Laurance se suivent et se ressemblent, faisant de Jean-Baptiste Ackerman le personnage pionnier et légendaire d'une extraordinaire aventure des vins mousseux à Saumur. Par une exploitation intensive des archives de l'entreprise mais également des archives publiques et des actes notariés, cette thèse propose une autre histoire en s'interrogeant sur les liens entre l'activité vinicole et les évolutions de la maison Ackerman-Laurance au XIXe siècle. Ackerman-Laurance étant le nom de l'entreprise familiale, nous avons choisi de reconstituer les familles, le négoce et l'entreprise de vins mousseux en suivant la vie de leurs chefs qui se succèdent à leur tête, Jean-Baptiste Ackerman puis son fils Louis-Ferdinand Ackerman. Dans une approche micro-historique, nous avons choisi de mettre en lumière les acteurs et les actrices, de reconstituer les structures des familles et de l'entreprise, les pratiques et les représentations du négoce et de l'industrie des vins mousseux. Une attention particulière a été prêtée à la restitution des réseaux sociaux, des mécanismes de production et de commercialisation ainsi que l'étude des interactions avec le territoire saumurois et le marché. Dans un XIXe siècle mouvementé, l'histoire Ackerman-Laurance est complexe et courbe : de la famille bourgeoise dont l'activité de manufacture de vins mousseux est dépendante du modèle de négoce familial jusqu'à la famille de notables profondément transformée par la conversion d'un patrimoine hérité en entreprise industrielle de vins mousseux dont les produits sont exportés dans le monde entier. La maison Ackerman-Laurance se raconte et se comprend par ses succès comme par ses faillites entrepreneuriales et familiales.
